Gingered Microgreen Salad
Ingredients
6 oz microgreens (2 oz peas, 2 oz broccoli, 2 oz red cabbage)
1 large carrot (box grated)
1 green apple (peeled and diced)
1 lemon (juiced)
1 tbsp olive oil
1 tbsp rice vinegar
2 tsp grated ginger
1 tbsp honey
salt (to taste)
Steps
Peel and dice the green apple and mix with the lemon juice. Set aside.
Combine the ginger, olive oil, rice vinegar and honey in a bowl. Set aside.
Combine the microgreens in a large bowl and toss together. Make sure to wash and pour off any seed shells.
Add the diced apple (and any leftover lemon juice if you'd like) and ginger dressing to the microgreens bowl, or alternatively, into a jar. Combine and toss all the ingredients until well mixed.
Taste and adjust as you like. Sometimes more honey, salt, or rice vinegar is needed.
